Recipe: Vegetarian Chilli

Vegetarian


 Ingredients:

  1. 3 stalks celery, cut into ¼ inch dice
  2. 1 large zucchini, cut into ½ inch dice
  3. 1 small red onion, finely diced
  4. 2 cloves garlic, minced
  5. 1(15 ounces) can cannellini beans, rinsed and drained
  6. 1(15 ounce) can red kidney beans, rinsed and drained
  7. ½ teaspoon salt
  8. ½ teaspoon black pepper
  9. 1 teaspoon cumin
  10. 2-3 bay leaves
  11. 1(15 ounce) can fire roasted tomatoes
  12. 2 tablespoons tomato paste
  13. 2 cups water

Directions:

Add all ingredients into a crockpot.  Cook on low for 10 hrs.  Stir occasionally – ready to serve
