Recipe: Cranberry Gorgonzola Green Salad

Vegetarian, Vegan, Low-Carb, Gluten-Free, Sugar-Free


 Ingredients:

  1. 1/3 c. vegetable oil
  2. 1/4 c. seasoned rice vinegar
  3. 3/4 tsp. Dijon mustard
  4. 1 clove garlic, very finely chopped
  5. 1 small head Bibb lettuce, torn
  6. 1 small head green leaf lettuce, torn
  7. 1 Granny Smith apple, diced
  8. 1/3 c. coarsely chopped walnuts, toasted
  9. 1/3 c. dried cranberries
  10. 1/3 c. crumbled Gorgonzola cheese

Directions:

Combine first 4 ingredients; stir with a wire whisk until blended. Set aside. Just before serving, combine Bibb lettuce and remaining 5 ingredients in a large bowl. Pour dressing over salad; toss gently. Yields 8 servings.
